Healthy Recipe: Apple and Caramel Crisp

When the chill of winter approaches, we often look for something warm and comforting. Well, look no further. Snuggle up on the couch with a mug of your favorite hot beverage and a serving of this deliciously fragrant, satisfying, and low-calorie version of a dessert classic.

  • ¾ cup old-fashioned oats, uncooked
  • ½ cup butter
  • ½ cup whole wheat flour
  • 1 tablespoon stevia
  • ½ cup Splenda brown sugar
  • 1½ teaspoons cinnamon
  • ¼ teaspoon ground nutmeg

  • 8 cups (about 3 pounds) tart apples, peeled and sliced thin
  • ½ cup caramel ice cream topping (or your own homemade caramel)
  • 3 tablespoons flour
  • 2 tablespoons fresh lemon juice
  • ½ cup Splenda brown sugar
  • ¾ teaspoon salt

Preheat oven to 375 degrees Fahrenheit. Grease or butter a glass or ceramic 13 x 9 x 2 baking dish. (Tip: Do not use an aluminum baking dish.)

In a medium bowl, mix together the oats, flour, sugars, cinnamon, nutmeg, and cut in butter until ingredients resemble coarse crumbs.

In another bowl, toss apples with caramel topping, flour, lemon juice, brown sugar, and salt. Spread the filling evenly into the baking dish and then sprinkle the topping over the filling.

Bake 45-50 minutes. Serve warm with an optional addition of vanilla or cinnamon ice cream.
