Healthy Recipe: Roasted Asparagus


  • 1/2 pound fresh asparagus, washed, with the ends cut off
  • 1 tsp. extra virgin olive oil
  • Salt and pepper to taste
  • 1 tbsp. shredded Parmesan cheese


Preheat oven to 425 degrees F. Place aluminum foil on a baking sheet. Drizzle olive oil on the foil. Place asparagus on the foil and toss to mix. Sprinkle salt and pepper on top. Roast in the oven for about 10-12 minutes (depending on thickness) or until tender. Remove from baking sheet and place onto a serving plate in a single layer. Sprinkle with Parmesan cheese.
